What is food dehydration, and how does it occur?​

The fact is that most fresh foods consist mainly of water. To preserve them and not let them spoil, today, they use canning and dehydration. But the first option does not allow keeping most of the vitamins and minerals in the products, and we have to add special preservatives, which are also not good for the body. Drying vegetables, fruits, berries, mushrooms, and herbs is a successful environmentally friendly alternative. In this case, the products retain all the valuable substances, no additives and preservatives are not in question, dried products are stored for a long time and acquire a unique texture and become more compact.

Hot air used during dehumidification in the drying chamber transfers the heat to the product, which leads to moisture evaporation and steam removal from its surface and the inner surface of the device.

Dehydration begins at the surface. Water during evaporation turns into steam and draws liquid from the inner layers of the product due to its porous structure. The evaporation rate is somewhat reduced when water remains only in the deepest layers, as the main channels through which it rises are already dry.

It is worth considering that drying is a fairly lengthy process. If dehydration is carried out very quickly, the product’s surface becomes overdry, while inside, its moisture has not evaporated anywhere. In this case, it is necessary to reduce the temperature in the chamber. If, on the contrary, the surface of the contents of the drying chamber remains wet for a long time, it is necessary to increase the temperature.

In the final stage, the drying process becomes even slower because the surface liquid has already disappeared, and a higher temperature is needed to evaporate the internal bound water. At this point, the degree inside the chamber increases.
